Cow thigh is also known as the beef shank. Each side of beef has two shanks, one in the forequarter and one in the hindquarter. It is extremely tough and full of connective tissue. It contains about 18kg – 20kg of beef only. You can choose to have the bones with the beef or just beef. It is available and can be bought at an affordable discount price.
